Sometimes I forget how versatile and easy an egg meal is, especially with two kids and a busy day. Here are several egg ideas that can be made ahead or made a la minute and they are always a winner with my kids! Now, if you have egg allergies or don't eat eggs, there are a lot of egg substitutes and egg-free recipes that can be just as quick and easy! Check out Detoxinista (or your favorite site) for egg substitutes. A lot of these recipes come down to personal preference, so I didn't include any recipes.
Eggs in a basket
This is such a fun way to eat eggs and for whatever reason I always forget about it. My daughter is still young so I cook hers over-medium, that way the yolk is mostly cooked but she still gets some "dipping" sauce. We use whole wheat bread for an extra dose of healthy.
Mini Quiche
This is a great make-ahead meal/snack and it is so versatile. You can add a variety of veggies, meats, or cheeses. I suggest picking a recipe that fits your dietary preferences, but our favorite is sausage, egg, and cheese :)
Frittata
I love frittatas! They are quick, easy, and versatile. They are easier to make than an omelette, but quicker to make than a quiche. If you have never checked out Kraft's recipes on their website, I highly recommend checking it out for easy frittata recipes. The other nice thing about frittatas is that they can be served for any meal, and they can be served hot or cold (well, more like room temp).
Egg Scramble
Not just your ordinary scrambled eggs (though those are yummy, too)! It's a great way to get some extra veggies into your child's meal and it is the easiest to make! Downside? It doesn't travel well, so this is a stay-at-home kind of meal.
Egg Burrito
This is super yummy, quick, and easy for kids to handle. You can cook the egg flat (like an omelette) and roll it up with meat and cheese (like the photo above) or you can scramble the egg and add toppings, like an egg scramble. When we make them we use whole wheat tortillas and it's delish!
Egg Quesadilla
This isn't my picture, but this is definitely what ours look like when we make them. Again, we use whole wheat tortillas and usually just eggs and cheese inside. It's easiest to cook the egg flat (like an omelette) instead of scrambling it, then stick it in the tortilla!
Hard-boiled Egg
I always forget about these quick snacks! Make them ahead, peel them, and stick them in the fridge for an easy snack. Don't want them to get gray on the inside? Soak them in an ice bath right when you finish boiling them.
Egg Sandwich
I fell in love with these sandwiches and the great thing is they can be made on bagels, english muffins, or regular bread. I added avocado, lettuce, tomato, and cheese to my over-hard eggs. It's delicious, but if your little one isn't in love with veggies, just nix them and do an egg and cheese sandwich!
